Containing all 9 essential amino acids, it is a complete protein and contains almost double the amount of protein compared with rice or corn. In fact, it has been found to be one of the most nutritious plant based proteins and is a superb staple in a vegan pantry.
To cook - use the ratio of 2:1, i.e. one cup of amaranth to two cups of liquid.
Bring to the boil and simmer for 15-20 minutes., yielding 2.5 cups of cooked grain.
